This
black caviar comes from either Paddlefish or Hackleback
Sturgeon. Hackleback caviar, with its smaller roe,
ranges in color from dark gray to black. Paddlefish,
a caviar with larger eggs, ranges in color from light to dark steel gray.
Both are firm and have an intense, nutty taste and are comparable in size, color
and taste to Caspian Sea Sevruga Sturgeon and make a wonderful and slightly less
expensive substitute. Which of two kinds is supplied depends on seasonal catches.
